Barolo Boiolo Docg

Barolo is brick red in colour with orange highlights; the nose releases aromas of coffee, tobacco, vanilla and red fruits, accompanied by violets and roses. On the palate it is imperious, powerful, elegant, soft and full. It goes perfectly with dishes of character, red meats in general, game and mature cheeses. Also excellent as a meditation wine.

Tomorrow because it is necessary to wait to enjoy an organoleptic balance dictated by this wine that represents the King of Italian oenology. In Boiolo, we focus on the typical characteristics of this cru that embrace the marls of Sant'Agata on one side and an eastern exposure on the other: balsamicity that intertwines warm herbaceous hints, ripe fruit in transition to more toasted hints. Deep, intense and ethereal.

TECHNIQUE

What we actually do...

After manual harvesting in October, the grapes are crushed and transferred to temperature-controlled stainless steel tanks. Fermentation takes place in the traditional way, with daily pumping over of the must on the cap for a minimum of 30 days. In the best years, the ancient method of fulling the cap for about 40 days is used. The skins remain immersed in the must as if in infusion, in order to extract as many aromas and flavours as possible. The wine is then drawn off and transferred into French oak barrels of about 25 hl, where the Barolo matures for 24 months. Finally, the wine is stored in Bordeaux bottles with natural corks for a further 12 months before release.
